Description
Delicate cookies bursting with sweet, tangy strawberry flavor, combining buttery richness with a melt-in-your-mouth texture.
Ingredients
Scale
- 1 ounce freeze-dried strawberries
- 2 cups all-purpose flour
- 1 cup (2 sticks) butter, softened
- 1/2 cup powdered sugar
- 1 teaspoon vanilla extract
- 1 cup powdered sugar for glaze
- 2 tablespoons milk for glaze
Instructions
- Cream together butter and powdered sugar in a mixing bowl until light and fluffy. Add vanilla extract and blend until fully incorporated.
- Gradually add the flour, mixing on low speed until just combined.
- Crush freeze-dried strawberries into a fine powder and fold into the dough.
- Shape the dough into a log or roll out to 1/2 inch thick; refrigerate for 30 minutes if using the log method.
- Preheat the oven to 325°F (160°C). Slice the log or cut shapes from rolled dough and place on a parchment-lined baking sheet.
- Bake for 18-22 minutes until edges are golden.
- Cool on the baking sheet for 5 minutes, then transfer to a wire rack to cool completely.
- Whisk together powdered sugar and milk for glaze, then drizzle or dip cooled cookies in the glaze and let it set.
Notes
Make-ahead by preparing the dough up to a week in advance; can freeze cookie logs for up to three months. Avoid overmixing and chilling the dough to maintain cookie texture.
