A simple and delicious recipe for vegan mac and cheese that is creamy and satisfying.
Ingredients

- 8 oz elbow macaroni
- 1 cup raw cashews, soaked
- 1/4 cup nutritional yeast
- 1/2 cup unsweetened almond milk
- 2 tbsp lemon juice
- 1 tsp garlic powder
- 1 tsp onion powder
- 1/2 tsp turmeric
- Salt and pepper to taste
Instructions
- Cook the elbow macaroni according to package instructions. Drain and set aside.
- In a blender, combine soaked cashews, nutritional yeast, almond milk, lemon juice, garlic powder, onion powder, turmeric, salt, and pepper.
- Blend until smooth and creamy.
- In a large pot, combine the cooked macaroni and the cheese sauce. Stir well to coat the pasta.
- Heat over low heat for a few minutes until warmed through.
- Serve immediately and enjoy!
Notes
- For a spicier version, add a pinch of cayenne pepper.
- Make sure to soak the cashews for at least 2 hours for a smoother sauce.
- This dish can be stored in the refrigerator for up to 3 days.
