Description

A simple and delicious recipe for vegan mac and cheese that is creamy and satisfying.


Ingredients

  • 8 oz elbow macaroni
  • 1 cup raw cashews, soaked
  • 1/4 cup nutritional yeast
  • 1/2 cup unsweetened almond milk
  • 2 tbsp lemon juice
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1/2 tsp turmeric
  • Salt and pepper to taste

Instructions

  1. Cook the elbow macaroni according to package instructions. Drain and set aside.
  2. In a blender, combine soaked cashews, nutritional yeast, almond milk, lemon juice, garlic powder, onion powder, turmeric, salt, and pepper.
  3. Blend until smooth and creamy.
  4. In a large pot, combine the cooked macaroni and the cheese sauce. Stir well to coat the pasta.
  5. Heat over low heat for a few minutes until warmed through.
  6. Serve immediately and enjoy!

Notes

  • For a spicier version, add a pinch of cayenne pepper.
  • Make sure to soak the cashews for at least 2 hours for a smoother sauce.
  • This dish can be stored in the refrigerator for up to 3 days.
