- 4 boiled eggs (chopped)
- 3 tbsp mayonnaise
- 1 tsp mustard sauce
- Salt & black pepper to taste
- 2 tbsp finely chopped onion
- 2 tbsp chopped fresh parsley
- 4 slices of bread
- Butter (for spreading)
Instructions
- Mix the chopped eggs with mayonnaise, mustard, onions, parsley, salt, and pepper in a mixing bowl until combined.
- Spread butter generously on one side of each bread slice.
- Add a generous layer of the egg mayo mixture on the unbuttered sides of two slices.
- Top with the second bread slices, buttered side facing out, forming a sandwich.
- Cut the sandwich into halves or triangles for serving.
Notes
Prepare the egg mayo mixture a day ahead for peak flavors, storing it in the fridge in a sealed container until ready to assemble.
