Description

Eton Mess Cheesecake Delight is a delicious dessert that combines the classic flavors of Eton Mess with a creamy cheesecake base, topped with fresh strawberries and crushed meringue.


Ingredients

  • 200g digestive biscuits
  • 100g unsalted butter, melted
  • 400g cream cheese
  • 100g powdered sugar
  • 300ml double cream
  • 1 tsp vanilla extract
  • 200g strawberries, chopped
  • 100g meringue, crushed

Instructions

  1. Preheat the oven to 180°C (350°F).
  2. Crush the digestive biscuits and mix with melted butter. Press into the bottom of a springform pan to form the base.
  3. In a bowl, beat the cream cheese and powdered sugar until smooth.
  4. In another bowl, whip the double cream and vanilla extract until soft peaks form.
  5. Fold the whipped cream into the cream cheese mixture gently.
  6. Layer half of the cheesecake mixture over the biscuit base.
  7. Add a layer of chopped strawberries and crushed meringue, then top with the remaining cheesecake mixture.
  8. Chill in the refrigerator for at least 4 hours or overnight.
  9. Before serving, top with additional strawberries and crushed meringue.

Notes

  • For a gluten-free version, use gluten-free biscuits.
  • Make sure to chill the cheesecake thoroughly for the best texture.
  • Feel free to substitute strawberries with other berries if desired.
