- 200g digestive biscuits
- 100g unsalted butter, melted
- 400g cream cheese
- 100g powdered sugar
- 300ml double cream
- 1 tsp vanilla extract
- 200g strawberries, chopped
- 100g meringue, crushed
Instructions
- Preheat the oven to 180°C (350°F).
- Crush the digestive biscuits and mix with melted butter. Press into the bottom of a springform pan to form the base.
- In a bowl, beat the cream cheese and powdered sugar until smooth.
- In another bowl, whip the double cream and vanilla extract until soft peaks form.
- Fold the whipped cream into the cream cheese mixture gently.
- Layer half of the cheesecake mixture over the biscuit base.
- Add a layer of chopped strawberries and crushed meringue, then top with the remaining cheesecake mixture.
- Chill in the refrigerator for at least 4 hours or overnight.
- Before serving, top with additional strawberries and crushed meringue.
Notes
- For a gluten-free version, use gluten-free biscuits.
- Make sure to chill the cheesecake thoroughly for the best texture.
