Description

Ingredients

  • 1 cup farro
  • 1 bunch asparagus, trimmed
  • 1 tablespoon olive oil
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/2 cup feta cheese, crumbled
  • 1/4 cup fresh parsley, chopped
  • 1 lemon, juiced

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Cook the farro according to package instructions, then drain and set aside.
  3. Toss the asparagus with olive oil, salt, and pepper, then spread on a baking sheet.
  4. Roast the asparagus in the oven for 15-20 minutes until tender.
  5. In a large bowl, combine the cooked farro, roasted asparagus, feta cheese, parsley, and lemon juice.
  6. Toss gently to combine and serve warm or at room temperature.
