- 1 cup farro
- 1 bunch asparagus, trimmed
- 1 tablespoon olive oil
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1/2 cup feta cheese, crumbled
- 1/4 cup fresh parsley, chopped
- 1 lemon, juiced
Instructions
- Preheat the oven to 400°F (200°C).
- Cook the farro according to package instructions, then drain and set aside.
- Toss the asparagus with olive oil, salt, and pepper, then spread on a baking sheet.
- Roast the asparagus in the oven for 15-20 minutes until tender.
- In a large bowl, combine the cooked farro, roasted asparagus, feta cheese, parsley, and lemon juice.
- Toss gently to combine and serve warm or at room temperature.
