A vibrant and fresh salad featuring juicy cherry tomatoes, briny olives, creamy feta, and crunchy garlicky croutons, perfect for any meal.
Ingredients

- 1½ cups cherry tomatoes, halved
- ½ cup pitted Kalamata or black olives, halved
- ½ cup cucumber, diced
- ¼ red onion, thinly sliced
- ½ cup crumbled feta cheese
- 2 tbsp fresh parsley, chopped
- 1 tbsp olive oil
- 1 tbsp red wine vinegar or lemon juice
- Salt and black pepper, to taste
- 2 cups crusty bread, cubed
- 2 tbsp olive oil (for croutons)
- 1 garlic clove, minced
- Pinch of salt (for croutons)
Instructions
- Preheat your oven to 180°C (350°F).
- In a bowl, toss together the cubed bread, olive oil, minced garlic, and a pinch of salt until evenly coated.
- Spread the mixture onto a baking sheet in a single layer. Bake for 10–12 minutes, flipping halfway through, until golden and crispy. Set aside to cool.
- In a large bowl, combine the cherry tomatoes, olives, cucumber, red onion, and parsley.
- Drizzle olive oil and red wine vinegar or lemon juice over the ingredients and season with salt and black pepper. Toss gently.
- Just before serving, fold in the crumbled feta and croutons.
Notes
For the best texture, use day-old bread for croutons and cool them completely before adding to the salad.
