- 2 cups cooked, shredded chicken
- 1 can black beans, drained and rinsed
- 1 cup corn (frozen or canned)
- 1 bell pepper, chopped
- 1 onion, chopped
- 2 cups shredded cheese (cheddar or Mexican blend)
- 1 cup sour cream
- 1 can diced tomatoes with green chilies
- 1 tablespoon taco seasoning
- Salt and pepper to taste
- Tortilla chips or tortillas (optional for layering)
Instructions
- Preheat the oven to 350°F (175°C).
- Combine shredded chicken, black beans, corn, bell pepper, onion, half of the cheese, sour cream, diced tomatoes, taco seasoning, salt, and pepper in a large mixing bowl.
- Layer the chicken mixture evenly in a greased 9×13 inch baking dish.
- Top with remaining cheese.
- Bake for 25-30 minutes or until cheese is bubbly and golden.
- Let it cool slightly before serving.
