Ingredients

- 4 cups corn kernels (fresh or frozen)
- 1/2 cup mayonnaise
- 1/2 cup sour cream
- 1 cup cotija cheese, crumbled
- 1/4 cup lime juice
- 1 teaspoon chili powder
- 1/2 teaspoon garlic powder
- 1/4 teaspoon salt
- 1/4 teaspoon black pepper
- 1/4 cup chopped cilantro (optional)
Instructions
- In a large bowl, combine corn kernels, mayonnaise, sour cream, cotija cheese, lime juice, chili powder, garlic powder, salt, and black pepper.
- Mix well until all ingredients are evenly coated.
- Transfer the mixture into individual cups or a large container.
- Cover and freeze for at least 4 hours or until solid.
- Before serving, let the cups sit at room temperature for a few minutes to soften slightly.
- Garnish with additional cotija cheese and cilantro if desired.
Notes
- For a spicier version, add diced jalapeños to the mixture.
- These can be made ahead of time and stored in the freezer for up to a month.
- Feel free to adjust the lime juice and chili powder to taste.
