Description

Ingredients

  • 6 large eggs
  • 1 cup spinach, chopped
  • 1 cup bell peppers, diced
  • 1/2 cup onion, diced
  • 1/2 cup cherry tomatoes, halved
  • 1/4 cup fresh herbs (such as basil, parsley, or chives), chopped
  • 1/2 cup feta cheese, crumbled
  • Salt and pepper to taste
  • 2 tablespoons olive oil

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. In a large bowl, whisk together the eggs, salt, and pepper.
  3. In an oven-safe skillet, heat olive oil over medium heat.
  4. Add onions and bell peppers, sautéing until softened.
  5. Add spinach and cherry tomatoes, cooking until spinach wilts.
  6. Pour the egg mixture over the vegetables in the skillet.
  7. Sprinkle feta cheese and fresh herbs on top.
  8. Cook on the stovetop for 2-3 minutes until the edges start to set.
  9. Transfer the skillet to the preheated oven and bake for 15-20 minutes until the frittata is set and lightly golden.
  10. Let it cool slightly before slicing and serving.
