Instructions

  1. Preheat your oven to 350°F (175°C) and grease a 9×13 inch baking pan.
  2. Cream together the softened butter and granulated sugar until light and fluffy, about 3-5 minutes.
  3. Add the eggs one at a time, mixing well after each addition.
  4. Stir in the vanilla extract.
  5. Whisk together the flour, baking powder, salt, and ground cinnamon in a separate bowl.
  6. Gradually add the dry ingredients to the wet ingredients, alternating with the milk.
  7. Mix until just combined.
  8. Combine brown sugar with the remaining cinnamon and nuts for the crumble topping.
  9. Spread half of the batter evenly in the prepared pan, sprinkle half of the crumble topping, then follow with the remaining batter and topping.
  10. Bake for 30-35 minutes, or until a toothpick inserted in the center comes out clean.
  11. Allow the cake to cool slightly before slicing and serving.

Notes

Consider using whole wheat flour for a more rustic texture, or almond milk for a dairy-free version. Perfect with coffee or tea!
