- 2 pounds baby potatoes
- 3 tablespoons olive oil
- 1 teaspoon garlic powder
- 1 teaspoon dried oregano
- Salt and pepper to taste
- 8 ounces feta cheese
- 1/4 cup Greek yogurt
- 1 tablespoon lemon juice
- Fresh herbs for garnish (optional)
Instructions
- Preheat the oven to 400°F (200°C).
- Wash and halve the baby potatoes.
- In a large bowl, toss the potatoes with olive oil, garlic powder, oregano, salt, and pepper.
- Spread the potatoes on a baking sheet in a single layer.
- Roast in the oven for 25-30 minutes or until golden and crispy.
- While the potatoes are roasting, prepare the whipped feta by blending feta cheese, Greek yogurt, lemon juice, and a pinch of salt until smooth.
- Once the potatoes are done, remove them from the oven and let them cool slightly.
- Serve the roasted potatoes topped with whipped feta and garnish with fresh herbs if desired.
Notes
- For extra flavor, add fresh garlic to the potatoes before roasting.
