Ingredients

  • 2 pounds baby potatoes
  • 3 tablespoons olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon dried oregano
  • Salt and pepper to taste
  • 8 ounces feta cheese
  • 1/4 cup Greek yogurt
  • 1 tablespoon lemon juice
  • Fresh herbs for garnish (optional)

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Wash and halve the baby potatoes.
  3. In a large bowl, toss the potatoes with olive oil, garlic powder, oregano, salt, and pepper.
  4. Spread the potatoes on a baking sheet in a single layer.
  5. Roast in the oven for 25-30 minutes or until golden and crispy.
  6. While the potatoes are roasting, prepare the whipped feta by blending feta cheese, Greek yogurt, lemon juice, and a pinch of salt until smooth.
  7. Once the potatoes are done, remove them from the oven and let them cool slightly.
  8. Serve the roasted potatoes topped with whipped feta and garnish with fresh herbs if desired.

  • For extra flavor, add fresh garlic to the potatoes before roasting.
