- 14 ounces firm tofu
- 2 tablespoons olive oil
- 2 tablespoons za’atar spice blend
- 1 tablespoon lemon juice
- Salt and pepper to taste
- Vegetables for skewering (bell peppers, zucchini, cherry tomatoes, red onion)
- Skewers (wooden or metal)
Instructions
- Press the tofu: Remove excess moisture by pressing the tofu for 20-30 minutes and cut into 1-inch cubes.
- Prepare the marinade: In a mixing bowl, combine olive oil, za’atar, lemon juice, salt, and pepper.
- Marinate the tofu: Gently add the tofu cubes and coat them with the marinade for at least 30 minutes.
- Skewer the tofu and vegetables: Thread the marinated tofu and vegetables onto skewers.
- Preheat the grill: Heat your grill or grill pan to medium-high.
- Grill the skewers: Cook for 10-15 minutes until the tofu is golden and veggies are tender.
- Serve and savor: Plate warm and enjoy!
Notes
For deeper flavor, marinate the tofu a few hours in advance. You can also swap out za’atar with other spices or use paneer instead of tofu.
