Ingredients

  • 14 ounces firm tofu
  • 2 tablespoons olive oil
  • 2 tablespoons za’atar spice blend
  • 1 tablespoon lemon juice
  • Salt and pepper to taste
  • Vegetables for skewering (bell peppers, zucchini, cherry tomatoes, red onion)
  • Skewers (wooden or metal)

Instructions

  1. Press the tofu: Remove excess moisture by pressing the tofu for 20-30 minutes and cut into 1-inch cubes.
  2. Prepare the marinade: In a mixing bowl, combine olive oil, za’atar, lemon juice, salt, and pepper.
  3. Marinate the tofu: Gently add the tofu cubes and coat them with the marinade for at least 30 minutes.
  4. Skewer the tofu and vegetables: Thread the marinated tofu and vegetables onto skewers.
  5. Preheat the grill: Heat your grill or grill pan to medium-high.
  6. Grill the skewers: Cook for 10-15 minutes until the tofu is golden and veggies are tender.

Notes

For deeper flavor, marinate the tofu a few hours in advance. You can also swap out za’atar with other spices or use paneer instead of tofu.
