Description

Grilled Zucchini Carbonara is a delightful twist on the classic Italian dish, featuring grilled zucchini for a fresh and healthy alternative.


Ingredients

  • 2 medium zucchinis
  • 200g spaghetti
  • 100g pancetta or bacon, diced
  • 2 large eggs
  • 50g grated Parmesan cheese
  • 2 cloves garlic, minced
  • Salt and pepper to taste
  • Fresh parsley, chopped for garnish

Instructions

  1. Preheat the grill to medium-high heat.
  2. Slice the zucchinis lengthwise and grill them for about 3-4 minutes on each side until tender.
  3. Cook the spaghetti according to package instructions until al dente.
  4. In a skillet, cook the pancetta or bacon over medium heat until crispy.
  5. Add minced garlic to the skillet and sauté for 1 minute.
  6. In a bowl, whisk together the eggs and grated Parmesan cheese.
  7. Drain the spaghetti and add it to the skillet with pancetta and garlic.
  8. Remove the skillet from heat and quickly mix in the egg and cheese mixture, stirring until creamy.
  9. Fold in the grilled zucchini and season with salt and pepper.
  10. Serve immediately, garnished with fresh parsley.

Notes

  • For a vegetarian option, omit the pancetta and use mushrooms instead.
