- 1 box vanilla cake mix
- 1 cup water
- 1/3 cup vegetable oil
- 3 large eggs
- 1 cup cottage cheese
- 1 cup whipped topping
- 1 cup pineapple chunks (drained)

- 1/2 cup chopped nuts (optional)
- 1/4 cup powdered sugar (for garnish)
Instructions
- Preheat oven to 350°F (175°C).
- In a large mixing bowl, combine cake mix, water, vegetable oil, and eggs. Beat on medium speed for 2 minutes until well blended.
- Pour batter into a prepared 9×13 inch pan and bake for 25-30 minutes, or until a toothpick inserted comes out clean.
- Allow the cake to cool in the pan for at least 30 minutes.
- Spread an even layer of cottage cheese over the cooled cake.
- Add a layer of whipped topping, smoothing it out.
- Spread pineapple chunks and sliced strawberries on top, then sprinkle shredded coconut and nuts.
- Dust the top with powdered sugar before serving.
