Description

Delicious homemade sourdough Runzas filled with savory ground beef, tender cabbage, and caramelized onions, encased in a tangy sourdough dough.


Ingredients

  • 2 cups sourdough starter
  • 4 cups all-purpose flour
  • 1 teaspoon salt
  • 1 tablespoon sugar
  • 1 cup warm water
  • 1 pound ground beef
  • 1 small onion, chopped
  • 2 cups chopped cabbage
  • 1 teaspoon garlic powder
  • Salt and pepper to taste
  • 1 tablespoon olive oil
  • 1 egg (for egg wash)

Instructions

  1. Combine the sourdough starter, flour, salt, sugar, and warm water in a large bowl. Knead the dough until smooth and elastic, about 5–7 minutes. Allow it to rise for 1–2 hours until doubled in size.
  2. Heat olive oil in a skillet and add chopped onion. Cook for about 5 minutes until soft.
  3. Stir in ground beef, cabbage, garlic powder, salt, and pepper. Cook until beef is browned and cabbage is soft, about 10 minutes. Allow filling to cool.
  4. Preheat the oven to 375°F (190°C).
  5. Roll out the dough to ¼ inch thick and cut into 4-inch squares.
  6. Place a spoonful of the filling in the center of each square. Fold and pinch edges to seal.
  7. Brush with beaten egg for a golden finish.
  8. Bake for 20-25 minutes until golden brown.

Notes

Experiment with different fillings like turkey, chicken, or veggies. Can also use an air fryer for quicker cooking.
