Description
Delicious homemade sourdough Runzas filled with savory ground beef, tender cabbage, and caramelized onions, encased in a tangy sourdough dough.

- 2 cups sourdough starter
- 4 cups all-purpose flour
- 1 teaspoon salt
- 1 tablespoon sugar
- 1 cup warm water
- 1 pound ground beef
- 1 small onion, chopped
- 2 cups chopped cabbage
- 1 teaspoon garlic powder
- Salt and pepper to taste
- 1 tablespoon olive oil
- 1 egg (for egg wash)
Instructions
- Combine the sourdough starter, flour, salt, sugar, and warm water in a large bowl. Knead the dough until smooth and elastic, about 5–7 minutes. Allow it to rise for 1–2 hours until doubled in size.
- Heat olive oil in a skillet and add chopped onion. Cook for about 5 minutes until soft.
- Stir in ground beef, cabbage, garlic powder, salt, and pepper. Cook until beef is browned and cabbage is soft, about 10 minutes. Allow filling to cool.
- Preheat the oven to 375°F (190°C).
- Roll out the dough to ¼ inch thick and cut into 4-inch squares.
- Place a spoonful of the filling in the center of each square. Fold and pinch edges to seal.
- Brush with beaten egg for a golden finish.
- Bake for 20-25 minutes until golden brown.
Notes
Experiment with different fillings like turkey, chicken, or veggies. Can also use an air fryer for quicker cooking.
