Description

Ingredients

  • 23 pounds pork loin
  • 1 cup breadcrumbs
  • 1/2 cup chopped apples
  • 1/4 cup chopped walnuts
  • 1/4 cup dried cranberries
  • 1/2 cup honey
  • 2 tablespoons Dijon mustard
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 tablespoon olive oil

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a bowl, mix breadcrumbs, chopped apples, walnuts, and cranberries.
  3. In a separate bowl, combine honey, Dijon mustard, salt, and pepper.
  4. Cut a pocket in the pork loin and stuff it with the breadcrumb mixture.
  5. Rub the outside of the pork loin with olive oil and the honey mixture.
  6. Place the pork loin in a roasting pan and roast for about 1.5 hours or until the internal temperature reaches 145°F (63°C).
  7. Let it rest for 10 minutes before slicing and serving.

Notes

  • For added flavor, marinate the pork loin overnight.
  • Serve with roasted vegetables or a fresh salad.
  • Leftovers can be stored in the refrigerator for up to 3 days.
