  • 1 cup White Vinegar (or apple cider vinegar)
  • 1/4 cup Sugar
  • 1 tbsp Salt
  • Spices: crushed garlic, peppercorns, fresh thyme (to taste)

Instructions

  1. Prepare the carrots by peeling and cutting into sticks or rounds.
  2. Make the pickling liquid by combining white vinegar, hot honey, sugar, and salt in a saucepan.
  3. Heat the mixture over medium, stirring until the sugar dissolves completely.
  4. Bring to a simmer for about 5 minutes.
  5. Pack the cut carrots into a sterilized mason jar.
  6. Pour the hot pickling liquid over the carrots until fully submerged.
  7. Add spices like garlic, peppercorns, or thyme, and close the lid tightly.
  8. Cool to room temperature before refrigerating. Allow to pickle for at least 24 hours.

Notes

These pickles taste even better after a couple of days. Experiment with different spices for customization.
