- 1 pound Carrots, peeled and cut into sticks or rounds
- 1/2 cup Hot Honey
- 1 cup White Vinegar (or apple cider vinegar)
- 1/4 cup Sugar
- 1 tbsp Salt
- Spices: crushed garlic, peppercorns, fresh thyme (to taste)
Instructions
- Prepare the carrots by peeling and cutting into sticks or rounds.
- Make the pickling liquid by combining white vinegar, hot honey, sugar, and salt in a saucepan.
- Heat the mixture over medium, stirring until the sugar dissolves completely.
- Bring to a simmer for about 5 minutes.
- Pack the cut carrots into a sterilized mason jar.
- Pour the hot pickling liquid over the carrots until fully submerged.
- Add spices like garlic, peppercorns, or thyme, and close the lid tightly.
- Cool to room temperature before refrigerating. Allow to pickle for at least 24 hours.
Notes
These pickles taste even better after a couple of days. Experiment with different spices for customization.
