Description

Delicious cookie cups filled with a creamy tiramisu filling, perfect for dessert lovers.


Ingredients

  • 1 cup all-purpose flour
  • 1/2 cup unsweetened cocoa powder
  • 1/2 cup granulated sugar
  • 1/2 cup unsalted butter, softened
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1 cup mascarpone cheese
  • 1/2 cup heavy cream
  • 1/4 cup powdered sugar
  • 1/4 cup brewed espresso, cooled
  • Cocoa powder for dusting

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a bowl, cream together the butter and granulated sugar until light and fluffy.
  3. Add the egg and vanilla extract, mixing until well combined.
  4. In another bowl, whisk together the flour, cocoa powder, baking powder, and salt.
  5. Gradually add the dry ingredients to the wet ingredients, mixing until a dough forms.
  6. Press the dough into a muffin tin to form cookie cups.
  7. Bake for 10-12 minutes, then let cool completely.
  8. In a separate bowl, whip the heavy cream and powdered sugar until stiff peaks form.
  9. Fold in the mascarpone cheese and cooled espresso until smooth.
  10. Fill the cooled cookie cups with the tiramisu filling.
  11. Dust with cocoa powder before serving.

Notes

  • For a stronger coffee flavor, use more espresso.
  • These cookie cups can be made a day in advance.
