- 1/2 cup erythritol
- 1/4 cup coconut flour
- 1 tsp baking powder

- 4 large eggs
- 1/2 cup unsweetened almond milk
- 1/4 cup orange juice
- 1 tsp orange zest
- 1 cup fresh cranberries
Instructions
- Preheat the oven to 350°F (175°C) and grease a loaf pan.
- In a large bowl, mix the almond flour, erythritol, coconut flour, baking powder, and salt.
- In another bowl, whisk together the eggs, almond milk, orange juice, and orange zest.
- Combine the wet ingredients with the dry ingredients and mix until well combined.
- Fold in the fresh cranberries.
- Pour the batter into the prepared loaf pan and smooth the top.
- Bake for 45-50 minutes or until a toothpick inserted in the center comes out clean.
- Let the bread cool in the pan for 10 minutes before transferring it to a wire rack to cool completely.
