Description

Delicious Keto Crispy Reuben Roll-Ups featuring melted Swiss cheese, corned beef, and tangy sauerkraut wrapped in a crispy shell.


Ingredients

  • 2 cups Shredded Swiss Cheese
  • 8 slices Corned Beef
  • 1 cup Sauerkraut
  • 1/2 cup Mayonnaise
  • 1 tablespoon Worcestershire Sauce
  • 1 tablespoon Sugar-Free Ketchup
  • 1 tablespoon Swerve Confectioner’s Sugar
  • 1 teaspoon Horseradish Sauce
  • 1 teaspoon Paprika

Instructions

  1. Melt the cheese by heating a non-stick skillet over medium heat and evenly sprinkling the shredded Swiss cheese. Allow it to melt for 2-3 minutes.
  2. Prepare the sauce by combining mayonnaise, Worcestershire sauce, sugar-free ketchup, Swerve confectioner’s sugar, horseradish sauce, and paprika in a mixing bowl. Whisk until smooth.
  3. Add the creamy mixture over the melted cheese, then layer with corned beef slices and sauerkraut.
  4. Roll the cheese over the filling tightly to create a neat roll.
  5. Sear the roll-ups seam-side down in the skillet for 2-3 minutes until golden brown, flipping to crisp all sides.
  6. Slice each roll-up in half and serve warm.

Notes

Make-ahead tip: Prepare the creamy sauce in advance and store in the refrigerator. Can also use an air fryer for a crispier finish.
