Ingredients

- 1 cup all-purpose flour
- 1/2 cup powdered sugar
- 1/2 cup unsalted butter, softened
- 1/4 teaspoon salt
- 2 large eggs
- 1 cup granulated sugar
- 1/2 cup fresh lime juice
- 1 tablespoon lime zest
- 1/4 teaspoon baking powder
Instructions
- Preheat your oven to 350°F (175°C). Grease an 8×8 inch baking dish.
- In a mixing bowl, combine the flour, powdered sugar, softened butter, and salt, mixing until it resembles coarse crumbs. Press into the bottom of the prepared baking dish.
- Bake the crust for 15 minutes until lightly golden. Let cool slightly.
- In another bowl, whisk together the eggs, granulated sugar, fresh lime juice, lime zest, and baking powder until smooth.
- Pour the lime mixture over the pre-baked crust.
- Bake for an additional 20-25 minutes, until the filling is set but slightly jiggles in the center.
- Let cool completely before slicing into squares for serving.
Notes
These Key Lime Bars can be made a day in advance and stored in the refrigerator. They taste even better as the flavors meld together.
