Description

Delicious and refreshing Key Lime Bars with a creamy filling and buttery crust, perfect for any gathering.


Ingredients

  • 1 cup all-purpose flour
  • 1/2 cup powdered sugar
  • 1/2 cup unsalted butter, softened
  • 1/4 teaspoon salt
  • 2 large eggs
  • 1 cup granulated sugar
  • 1/2 cup fresh lime juice
  • 1 tablespoon lime zest
  • 1/4 teaspoon baking powder

Instructions

  1. Preheat your oven to 350°F (175°C). Grease an 8×8 inch baking dish.
  2. In a mixing bowl, combine the flour, powdered sugar, softened butter, and salt, mixing until it resembles coarse crumbs. Press into the bottom of the prepared baking dish.
  3. Bake the crust for 15 minutes until lightly golden. Let cool slightly.
  4. In another bowl, whisk together the eggs, granulated sugar, fresh lime juice, lime zest, and baking powder until smooth.
  5. Pour the lime mixture over the pre-baked crust.
  6. Bake for an additional 20-25 minutes, until the filling is set but slightly jiggles in the center.
  7. Let cool completely before slicing into squares for serving.

Notes

These Key Lime Bars can be made a day in advance and stored in the refrigerator. They taste even better as the flavors meld together.
