Description

A burst of sunshine in each bite, Key Lime Bars feature a golden shortbread crust and an exquisitely creamy, tangy filling that brings a refreshing taste of summer to any gathering.


Ingredients

  • 227 g unsalted butter, softened
  • 100 g granulated sugar
  • 250 g all-purpose flour
  • 1.25 g (1/4 teaspoon) kosher salt
  • 5 large eggs, at room temperature
  • 300 g granulated sugar
  • 95 g all-purpose flour
  • 180 ml key lime juice
  • 2 tablespoons key lime zest
  • Powdered sugar, for dusting

Instructions

  1. Preheat your oven to 175°C (350°F). Line a 23 x 33 cm baking pan with parchment paper and grease it thoroughly.
  2. In a mixing bowl, cream the softened butter for 2–3 minutes until light and fluffy. Add in 100 g granulated sugar and 250 g flour. Mix until combined.
  3. Press the dough evenly into the prepared pan and chill for 15 minutes. Bake for 15–20 minutes until golden.
  4. In a large bowl, whisk together 5 eggs, 300 g granulated sugar, 95 g flour, 180 ml key lime juice, and 2 tablespoons zest until smooth. Pour over the cooled crust.
  5. Bake again for 25–30 minutes until the filling is just set. Cool completely.
  6. Refrigerate until cold, dust with powdered sugar, slice into 16 bars, and serve.

Notes

Key Lime Bars can be made a day in advance for best flavor. They can also be frozen for up to 3 months. Consider adding shredded coconut or fresh mint for a twist.
