A burst of sunshine in each bite, Key Lime Bars feature a golden shortbread crust and an exquisitely creamy, tangy filling that brings a refreshing taste of summer to any gathering.

- 227 g unsalted butter, softened
- 100 g granulated sugar
- 250 g all-purpose flour
- 1.25 g (1/4 teaspoon) kosher salt
- 5 large eggs, at room temperature
- 300 g granulated sugar
- 95 g all-purpose flour
- 180 ml key lime juice
- 2 tablespoons key lime zest
- Powdered sugar, for dusting
Instructions
- Preheat your oven to 175°C (350°F). Line a 23 x 33 cm baking pan with parchment paper and grease it thoroughly.
- In a mixing bowl, cream the softened butter for 2–3 minutes until light and fluffy. Add in 100 g granulated sugar and 250 g flour. Mix until combined.
- Press the dough evenly into the prepared pan and chill for 15 minutes. Bake for 15–20 minutes until golden.
- In a large bowl, whisk together 5 eggs, 300 g granulated sugar, 95 g flour, 180 ml key lime juice, and 2 tablespoons zest until smooth. Pour over the cooled crust.
- Bake again for 25–30 minutes until the filling is just set. Cool completely.
- Refrigerate until cold, dust with powdered sugar, slice into 16 bars, and serve.
Notes
Key Lime Bars can be made a day in advance for best flavor. They can also be frozen for up to 3 months. Consider adding shredded coconut or fresh mint for a twist.
