Description

Lemon Blueberry Cheesecake Bars are a delicious and refreshing dessert that combines the tangy flavor of lemon with sweet blueberries, all atop a creamy cheesecake base.


Ingredients

  • 1 ½ cups graham cracker crumbs
  • ½ cup unsalted butter, melted
  • 2 cups cream cheese, softened
  • 1 cup granulated sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 tablespoon lemon zest
  • ½ cup fresh lemon juice
  • 1 cup fresh blueberries

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a bowl, mix graham cracker crumbs and melted butter until combined, then press into the bottom of a greased baking dish.
  3. In a separate bowl, beat cream cheese and sugar until smooth.
  4. Add eggs, vanilla extract, lemon zest, and lemon juice to the cream cheese mixture and blend until well combined.
  5. Gently fold in the blueberries.
  6. Pour the cheesecake mixture over the crust in the baking dish.
  7. Bake for 30-35 minutes or until the center is set.
  8. Allow to cool, then refrigerate for at least 2 hours before slicing into bars.

Notes

  • For best results, use fresh blueberries.
  • These bars can be stored in the refrigerator for up to 5 days.
  • Feel free to add more lemon zest for a stronger lemon flavor.
