- Juice and zest of 1 fresh lemon
- 4 tablespoons unsalted butter (or ghee/olive oil for dairy-free)
- 2 cups Yukon Gold or Red potatoes, cubed
- 2 cups fresh broccoli florets
- Olive oil, for drizzling
- Salt and pepper, to taste
- 2 cloves minced garlic (optional)
Instructions
- Preheat the oven to 425°F (220°C).
- Prepare the potatoes by cutting them into small cubes and tossing in a mixing bowl with olive oil, salt, and pepper.
- Bake the potatoes for about 20 minutes until golden and tender.
- Season the salmon fillets with salt and pepper. In a small saucepan, melt the butter and mix in the fresh lemon juice and zest.
- Add the broccoli to the baking sheet with just 10 minutes left for the potatoes, drizzling with olive oil and tossing gently.
- Place the salmon on the baking sheet in the final 5 minutes, brushing it with the lemon butter sauce.
- Serve the salmon alongside crispy potatoes and broccoli, drizzling remaining lemon butter over the dish.
Notes
For a dairy-free option, substitute butter with ghee or olive oil. You can also use an air fryer for quicker cooking.
