  • 2 cups Yukon Gold or Red potatoes, cubed
  • 2 cups fresh broccoli florets
  • Olive oil, for drizzling
  • Salt and pepper, to taste
  • 2 cloves minced garlic (optional)

Instructions

  1. Preheat the oven to 425°F (220°C).
  2. Prepare the potatoes by cutting them into small cubes and tossing in a mixing bowl with olive oil, salt, and pepper.
  3. Bake the potatoes for about 20 minutes until golden and tender.
  4. Season the salmon fillets with salt and pepper. In a small saucepan, melt the butter and mix in the fresh lemon juice and zest.
  5. Add the broccoli to the baking sheet with just 10 minutes left for the potatoes, drizzling with olive oil and tossing gently.
  6. Place the salmon on the baking sheet in the final 5 minutes, brushing it with the lemon butter sauce.
  7. Serve the salmon alongside crispy potatoes and broccoli, drizzling remaining lemon butter over the dish.

Notes

For a dairy-free option, substitute butter with ghee or olive oil. You can also use an air fryer for quicker cooking.
