  • 2 tablespoons fresh lemon juice
  • 1 teaspoon lemon zest (for the curd)
  • 30 grams unsalted butter (for the curd)

Instructions

  1. Preheat your oven to 180°C (350°F) and grease your mini cake pan.
  2. In a bowl, whisk together flour, baking powder, salt, and sugar.
  3. In another bowl, whisk together egg, milk, melted butter, lemon zest, and vanilla extract.
  4. Pour the wet mixture into the dry ingredients and stir until just combined.
  5. Divide the batter among the cake cups, filling each about two-thirds full.
  6. Bake for 12 to 15 minutes, until a toothpick comes out clean.
  7. In a saucepan, whisk together eggs, sugar, lemon juice, and lemon zest over medium heat to make the lemon curd.
  8. Stir until thickened (about 8-10 minutes) and remove from heat. Whisk in butter until smooth.
  9. Once cooled, cut a well in each cake and fill with lemon curd.
  10. Serve immediately or chill before serving.
