- 1 whole chicken (about 4–5 lbs)
- 4 cloves garlic, minced
- 2 lemons, zested and juiced
- 1 lb radishes, halved
- 2 tablespoons olive oil
- Salt and pepper to taste
- Fresh herbs (such as thyme or rosemary) for garnish
Instructions
- Preheat the oven to 425°F (220°C).
- In a bowl, mix the minced garlic, lemon zest, lemon juice, olive oil, salt, and pepper.
- Rub the mixture all over the chicken, including under the skin.
- Place the chicken in a roasting pan and surround it with the halved radishes.
- Roast in the preheated oven for about 1 hour and 15 minutes, or until the chicken is cooked through and the juices run clear.
- Let the chicken rest for 10 minutes before carving.
- Serve with the roasted radishes and garnish with fresh herbs.
Notes
- For extra flavor, marinate the chicken in the lemon garlic mixture for a few hours or overnight.
- Adjust the cooking time based on the size of the chicken.
