Description

Ingredients

  • 4 cloves garlic, minced
  • 2 lemons, zested and juiced
  • 1 lb radishes, halved
  • 2 tablespoons olive oil
  • Salt and pepper to taste
  • Fresh herbs (such as thyme or rosemary) for garnish

Instructions

  1. Preheat the oven to 425°F (220°C).
  2. In a bowl, mix the minced garlic, lemon zest, lemon juice, olive oil, salt, and pepper.
  3. Rub the mixture all over the chicken, including under the skin.
  4. Place the chicken in a roasting pan and surround it with the halved radishes.
  5. Roast in the preheated oven for about 1 hour and 15 minutes, or until the chicken is cooked through and the juices run clear.
  6. Let the chicken rest for 10 minutes before carving.
  7. Serve with the roasted radishes and garnish with fresh herbs.
