  • 1/4 cup sugar
  • 1/4 tsp salt
  • 1/4 cup ice water
  • 1 cup sugar (for filling)
  • 1/4 cup cornstarch
  • 1/4 tsp salt (for filling)
  • 1 1/2 cups water
  • 4 egg yolks, beaten
  • 2 tbsp butter
  • 1/2 cup lemon juice
  • 1 tbsp lemon zest
  • 4 egg whites
  • 1/4 tsp cream of tartar

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Prepare the crust: In a mixing bowl, combine the flour, diced butter, sugar, and salt, mixing until it resembles coarse crumbs. Gradually add ice water until the dough comes together. Chill for 30 minutes.
  3. Roll out the dough on a lightly floured surface to fit your tart pan, press it into the pan, prick the bottom with a fork, and bake for 15-20 minutes until golden brown.
  4. Make the filling: In a saucepan, whisk together 1 cup of sugar, cornstarch, and salt. Gradually add 1 1/2 cups water, stirring until thickened.
  5. Incorporate the egg yolks: Slowly whisk the hot mixture into the beaten egg yolks, then return to the pot and cook for 2-3 minutes until thickened.
  6. Add lemon juice, zest, and butter to the mixture and pour it into the pre-baked crust.
  7. Prepare the meringue: Beat egg whites with cream of tartar until soft peaks form. Gradually add sugar until stiff peaks form, then spread over lemon filling.
  8. Bake at 350°F (175°C) for 10-15 minutes until the meringue is golden brown.
  9. Cool completely before slicing.

Notes

Chill the crust and filling before assembling for the best flavor. Use fresh lemons for the best taste. Store the tart in the fridge, loosely covered.
