A refreshing and zesty Lemon Shrimp & Orzo Pasta Salad perfect for a light meal or side dish.
Ingredients

- 8 oz orzo pasta
- 1 lb shrimp, peeled and deveined
- 2 tbsp olive oil
- 2 cloves garlic, minced
- 1 cup cherry tomatoes, halved
- 1/2 cup cucumber, diced
- 1/4 cup red onion, finely chopped
- 1/4 cup fresh parsley, chopped
- Juice of 1 lemon
- Salt and pepper to taste
Instructions
- Cook the orzo pasta according to package instructions. Drain and set aside.
- In a large skillet, heat olive oil over medium heat. Add garlic and sauté for 1 minute.
- Add shrimp to the skillet and cook until pink and opaque, about 3-4 minutes.
- In a large bowl, combine cooked orzo, shrimp, cherry tomatoes, cucumber, red onion, and parsley.
- Drizzle with lemon juice and season with salt and pepper. Toss to combine.
- Serve chilled or at room temperature.
Notes
- For added flavor, marinate the shrimp in lemon juice and garlic before cooking.
- This salad can be made ahead of time and stored in the refrigerator for up to 2 days.
- Feel free to add other vegetables like bell peppers or avocado.
