Ingredients

  • 1/2 cup cream cheese, softened
  • 1/4 cup powdered sugar
  • 1/4 cup fresh lemon juice
  • 1 tablespoon lemon zest
  • 1 cup white chocolate chips
  • 1 tablespoon coconut oil (optional)
  • Extra powdered sugar or desiccated coconut for coating

Instructions

  1. Combine base ingredients: In a large mixing bowl, scoop in the vanilla wafer crumbs, softened cream cheese, powdered sugar, fresh lemon juice, and zest. Use a spatula or mixer to blend until the mixture is smooth and cohesive.
  2. Shape the mixture: Using your hands or a baking scoop, roll the mixture into small balls, about 1 inch in diameter. Place them on the prepared baking sheet lined with parchment paper for ease.
  3. Freeze for firmness: Pop the tray in the freezer and let the truffles chill for about 30 minutes until they become firm.
  4. Melt the chocolate: While the truffles chill, melt the white chocolate chips and coconut oil in a microwave-safe bowl, heating in 30-second intervals. Stir between each interval until the mixture is smooth and glossy.
  5. Dip the truffles: Once the truffles are firm, dip each one into the melted chocolate, allowing the excess to drip off.
  6. Coat with sweetness: Roll the coated truffles in either powdered sugar or desiccated coconut, depending on your preference.
  7. Set and serve: Place the coated truffles back onto the parchment paper. Allow them to set until the chocolate hardens.

Notes

Truffles can be made a day in advance and stored in an airtight container. They can also be frozen for about a month.
