- 1 ½ cups graham cracker crumbs
- ½ cup unsalted butter, melted
- 2 cups cream cheese, softened
- 1 cup powdered sugar
- 1 cup heavy cream
- 1 teaspoon vanilla extract
- Zest of 2 limes
- ½ cup lime juice
- 1 packet unflavored gelatin (optional)
Instructions
- Preheat your oven to 325°F (160°C) and grease a 9-inch springform pan.
- Combine graham cracker crumbs and melted butter in a mixing bowl. Press into the bottom of the prepared pan.
- Bake the crust for 10 minutes, then cool completely.
- Beat softened cream cheese with powdered sugar until smooth and creamy.
- Add lime zest and lime juice to the cream cheese mixture and blend until combined.
- In a separate bowl, whip heavy cream and vanilla extract until soft peaks form.
- Gently fold whipped cream into the cream cheese mixture.
- If desired, dissolve gelatin in warm water and mix into the cheesecake mixture.
- Pour the lime mousse filling over the cooled crust.
- Refrigerate for at least 4 hours until set.
- Garnish with fresh lime slices or whipped cream before serving.
Notes
Make-ahead: Prepare a day in advance for best results. Optional to use gelatine for firmer texture.
