Description

A light and creamy dessert featuring a tangy lime mousse over a crunchy graham cracker crust, perfect for summer gatherings.


Ingredients

  • 1 ½ cups graham cracker crumbs
  • ½ cup unsalted butter, melted
  • 2 cups cream cheese, softened
  • 1 cup powdered sugar
  • 1 cup heavy cream
  • 1 teaspoon vanilla extract
  • Zest of 2 limes
  • ½ cup lime juice
  • 1 packet unflavored gelatin (optional)

Instructions

  1. Preheat your oven to 325°F (160°C) and grease a 9-inch springform pan.
  2. Combine graham cracker crumbs and melted butter in a mixing bowl. Press into the bottom of the prepared pan.
  3. Bake the crust for 10 minutes, then cool completely.
  4. Beat softened cream cheese with powdered sugar until smooth and creamy.
  5. Add lime zest and lime juice to the cream cheese mixture and blend until combined.
  6. In a separate bowl, whip heavy cream and vanilla extract until soft peaks form.
  7. Gently fold whipped cream into the cream cheese mixture.
  8. If desired, dissolve gelatin in warm water and mix into the cheesecake mixture.
  9. Pour the lime mousse filling over the cooled crust.
  10. Refrigerate for at least 4 hours until set.
  11. Garnish with fresh lime slices or whipped cream before serving.

Notes

Make-ahead: Prepare a day in advance for best results. Optional to use gelatine for firmer texture.
