- 1 cup black beans, rinsed and drained
- 1 cup corn, canned or frozen

- 1 avocado, diced
- 1/2 cup salsa

- 1 tablespoon olive oil
- Salt and pepper to taste
Instructions
- Preheat the oven to 400°F (200°C).
- Slice the sweet potatoes into thin rounds and toss them with olive oil, salt, and pepper.
- Spread the sweet potato slices on a baking sheet in a single layer.
- Bake for 20-25 minutes, flipping halfway through, until they are crispy.
