Ingredients

  • 2 large sweet potatoes
  • 1 cup black beans, rinsed and drained
  • 1 cup corn, canned or frozen
  • 1 cup shredded cheese (cheddar or your choice)
  • 1 avocado, diced
  • 1/2 cup salsa
  • 1/4 cup green onions, chopped
  • 1 tablespoon olive oil
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Slice the sweet potatoes into thin rounds and toss them with olive oil, salt, and pepper.
  3. Spread the sweet potato slices on a baking sheet in a single layer.
  4. Bake for 20-25 minutes, flipping halfway through, until they are crispy.
