Ingredients

  • 8 oz linguine pasta
  • 1 lb lobster meat, cooked and chopped
  • 1 cup sweet corn, fresh or frozen
  • 1 cup cherry tomatoes, halved
  • 3 cloves garlic, minced
  • 1/4 cup olive oil
  • 1/4 cup fresh basil, chopped
  • Salt and pepper to taste
  • Parmesan cheese, for serving

Instructions

  1. Cook the linguine pasta according to package instructions until al dente. Drain and set aside.
  2. In a large skillet, heat olive oil over medium heat. Add minced garlic and sauté until fragrant.
  3. Add the sweet corn and cherry tomatoes to the skillet, cooking until the tomatoes are soft.
  4. Stir in the cooked lobster meat and cooked pasta, tossing to combine.
  5. Season with salt, pepper, and fresh basil. Mix well.
  6. Serve hot, topped with grated Parmesan cheese.

Notes

  • For a spicier kick, add red pepper flakes when sautéing the garlic.
  • Feel free to substitute the lobster with shrimp or crab if desired.
