- 8 oz linguine pasta
- 1 lb lobster meat, cooked and chopped
- 1 cup sweet corn, fresh or frozen
- 1 cup cherry tomatoes, halved
- 3 cloves garlic, minced
- 1/4 cup olive oil
- 1/4 cup fresh basil, chopped
- Salt and pepper to taste
- Parmesan cheese, for serving
Instructions
- Cook the linguine pasta according to package instructions until al dente. Drain and set aside.
- In a large skillet, heat olive oil over medium heat. Add minced garlic and sauté until fragrant.
- Add the sweet corn and cherry tomatoes to the skillet, cooking until the tomatoes are soft.
- Stir in the cooked lobster meat and cooked pasta, tossing to combine.
- Season with salt, pepper, and fresh basil. Mix well.
- Serve hot, topped with grated Parmesan cheese.
Notes
- For a spicier kick, add red pepper flakes when sautéing the garlic.
- Feel free to substitute the lobster with shrimp or crab if desired.
