Ingredients

- 1 cup coconut milk
- 1/4 cup chia seeds
- 1 ripe mango, diced
- 1/2 cup dragon fruit, diced
- 2 tablespoons honey or maple syrup (optional)
- 1 teaspoon vanilla extract
Instructions
- In a bowl, combine coconut milk, chia seeds, honey or maple syrup, and vanilla extract.
- Stir well and let it sit for about 10 minutes, then stir again to prevent clumping.
- Cover the bowl and refrigerate for at least 2 hours or overnight until it thickens.
- Once thickened, layer the chia pudding with diced mango and dragon fruit in serving glasses.
- Top with additional fruit if desired and serve chilled.
Notes
- For a creamier texture, blend the coconut milk before mixing with chia seeds.
- Feel free to substitute coconut milk with almond milk or any other milk of your choice.
- Chia pudding can be stored in the refrigerator for up to 5 days.
