- 1 lb boneless skinless chicken breasts
- 2 large sweet potatoes
- 2 tbsp olive oil
- 2 tbsp Dijon mustard
- 2 tbsp pure maple syrup
- 1 tsp garlic powder
- 1/2 tsp smoked paprika
- 1 tsp salt
- 1/2 tsp black pepper
- 2 tbsp chopped fresh parsley
Instructions
- Preheat your oven to 400°F (200°C).
- Peel and cube the sweet potatoes into approximately one-inch pieces and toss them with 1 tablespoon of olive oil, salt, and pepper.
- Spread the sweet potatoes in a single layer on a baking sheet and roast for 20 to 25 minutes until tender and caramelized.
- Whisk together the Dijon mustard, maple syrup, remaining tablespoon of olive oil, garlic powder, and smoked paprika in a mixing bowl.
- Season chicken breasts with salt and pepper, and brush with the Maple Dijon mixture.
- Heat a skillet over medium heat and cook the chicken breasts for 6 to 8 minutes on each side until cooked through.
- Remove from skillet and let rest for 5 minutes before slicing.
- Divide roasted sweet potatoes and sliced chicken among bowls. Drizzle with remaining sauce and sprinkle with parsley.
Notes
Marinate the chicken in the Maple Dijon mixture ahead of time for deeper flavor. Avoid overcrowding the sweet potatoes on the baking sheet.
