Ingredients

  • 1 whole chicken (about 45 lbs)
  • 1/2 cup maple syrup
  • 1/4 cup soy sauce
  • 2 tablespoons Dijon mustard
  • 2 tablespoons olive oil
  • 4 cloves garlic, minced
  • Salt and pepper to taste
  • Fresh thyme for garnish

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. In a bowl, mix together maple syrup, soy sauce, Dijon mustard, olive oil, minced garlic, salt, and pepper.
  3. Place the chicken in a roasting pan and brush the maple glaze all over the chicken.
  4. Roast the chicken in the preheated oven for about 1 hour and 15 minutes, or until the internal temperature reaches 165°F (75°C).
  5. Baste the chicken with the glaze every 20 minutes for extra flavor.
  6. Once cooked, let the chicken rest for 10 minutes before carving.
  7. Garnish with fresh thyme and serve.

Notes

  • For a crispy skin, broil the chicken for the last 5 minutes of cooking.
  • Serve with roasted vegetables or a fresh salad.
