Description

Tender salmon bites glazed with a sweet and spicy maple Sriracha sauce, complemented by a refreshing mango salsa, served over fluffy rice.


Ingredients

  • 1 lb salmon fillets
  • 1/4 cup maple syrup
  • 23 tbsp Sriracha sauce
  • 1 ripe mango, diced
  • 1/4 cup red onion, finely chopped
  • 1/4 cup cilantro, chopped
  • 1 lime, juiced
  • 2 cups cooked rice
  • 1 bell pepper, sliced
  • 1 cucumber, sliced
  • Salt and pepper, to taste

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Cut the salmon into bite-sized pieces.
  3. Mix maple syrup and Sriracha sauce in a bowl.
  4. Coat the salmon pieces in the glaze.
  5. Place the salmon on a lined baking sheet.
  6. Bake for 12-15 minutes until cooked through.
  7. Combine mango, red onion, cilantro, lime juice, salt, and pepper in a bowl for salsa.
  8. Serve rice topped with salmon and salsa, garnished with bell peppers and cucumbers.

Notes

Make the mango salsa a few hours ahead of serving for best flavor. Try using an air fryer for the salmon bites.
