Description
Tender salmon bites glazed with a sweet and spicy maple Sriracha sauce, complemented by a refreshing mango salsa, served over fluffy rice.
Ingredients

- 1 lb salmon fillets
- 1/4 cup maple syrup
- 2–3 tbsp Sriracha sauce
- 1 ripe mango, diced
- 1/4 cup red onion, finely chopped
- 1/4 cup cilantro, chopped
- 1 lime, juiced
- 2 cups cooked rice
- 1 bell pepper, sliced
- 1 cucumber, sliced
- Salt and pepper, to taste
Instructions
- Preheat your oven to 400°F (200°C).
- Cut the salmon into bite-sized pieces.
- Mix maple syrup and Sriracha sauce in a bowl.
- Coat the salmon pieces in the glaze.
- Place the salmon on a lined baking sheet.
- Bake for 12-15 minutes until cooked through.
- Combine mango, red onion, cilantro, lime juice, salt, and pepper in a bowl for salsa.
- Serve rice topped with salmon and salsa, garnished with bell peppers and cucumbers.
Notes
Make the mango salsa a few hours ahead of serving for best flavor. Try using an air fryer for the salmon bites.
