Ingredients

  • 1.5 pounds chicken breast, cut into bite-sized pieces
  • 3 cups fresh spinach
  • 1.5 cups cherry tomatoes, halved
  • 1 large red bell pepper, diced
  • 1 medium yellow squash, sliced
  • 4 garlic cloves, minced
  • 3 tablespoons olive oil
  • 1 teaspoon dried oregano
  • 0.5 teaspoon red pepper flakes
  • Zest of 1 lemon
  • Salt and black pepper to taste

Instructions

  1. Prep the Chicken: Pat the chicken dry, season with salt, pepper, and half of the oregano.
  2. Sear the Chicken: In a skillet, heat 2 tablespoons olive oil over medium-high heat. Add chicken, sear for 5-6 minutes until golden, then transfer to a plate.
  3. Cook the Vegetables: Add remaining olive oil, sauté garlic for 30 seconds, then add bell pepper and squash. Cook for 4-5 minutes.
  4. Add Tomatoes and Spinach: Stir in cherry tomatoes, then return chicken and add spinach, remaining oregano, red pepper flakes, and salt. Cook until spinach wilts, about 2-3 minutes.
  5. Finish and Serve: Remove from heat, add lemon zest, adjust seasonings, and serve immediately.

Notes

You can marinate the chicken in advance for enhanced flavor. Feel free to customize with seasonal vegetables.
