- 8 oz pasta (penne or fusilli)
- 1 cup sun-dried tomatoes, chopped
- 2 cloves garlic, minced
- 1/2 cup olives, sliced
- 1 cup feta cheese, crumbled
- 2 tablespoons olive oil
- Salt and pepper to taste
- Fresh basil or parsley for garnish
Instructions
- Cook the Pasta: Bring a large pot of salted water to a boil. Add the pasta and cook according to package instructions until al dente. Drain well and set aside.
- Sauté the Garlic: In a large skillet, heat the olive oil over medium heat. Add minced garlic and sauté until fragrant, about 30 seconds.
- Add Tomatoes and Olives: Stir in the chopped sun-dried tomatoes and sliced olives. Cook for 3-4 minutes.
- Combine with Pasta: Add the drained pasta to the skillet, tossing gently to coat it evenly.
- Fold in Feta: Remove from heat and gently fold the crumbled feta into the pasta.
- Season to Taste: Season with salt and freshly cracked pepper as desired.
- Serve and Garnish: Dish the pasta into bowls and finish with fresh basil or parsley.
