Description

Ingredients

  • 1 pound juicy marinated chicken breast
  • 1 cup cherry tomatoes, halved
  • 2 cups fresh spinach
  • 1/2 cup Kalamata olives, pitted and sliced
  • 1/4 cup freshly squeezed lemon juice
  • 3 cloves garlic, minced
  • 1/2 cup crumbled feta cheese
  • Salt and pepper to taste
  • Olive oil for cooking

Instructions

  1. Cook the pasta: In a large pot of salted boiling water, cook the angel hair pasta according to package instructions until al dente. Drain and set aside, reserving a little pasta water for later use.
  2. Cook the chicken: In a wide skillet over medium heat, add your marinated chicken. Cook until it is golden brown and fully cooked through, about 5-7 minutes per side, depending on thickness. Ensure it reaches an internal temperature of 165°F (75°C).
  3. Sauté the garlic: Once the chicken is cooked, add minced garlic to the skillet, sautéing until fragrant, about 30 seconds.
  4. Add vegetables and pasta: Toss in the cherry tomatoes, fresh spinach, and olives, cooking until the spinach wilts and the tomatoes soften, about 2-3 minutes. Stir in the cooked pasta, mixing well to combine.
  5. Drizzle with lemon: Squeeze fresh lemon juice over the pasta and give it a good toss. If the mixture feels too dry, add a splash of the reserved pasta water to loosen.
  6. Top with feta: Remove the skillet from heat and sprinkle crumbled feta cheese over the top.

Notes

Marinate your chicken in advance for maximum flavor. Feel free to substitute chicken with shrimp or tofu for a different protein option.
