Description

Ingredients

  • 4 salmon fillets
  • 1 cup jasmine rice
  • 2 cups vegetable broth
  • 1 lemon (zested and juiced)
  • 2 tablespoons olive oil
  • 2 cloves garlic (minced)
  • 1 teaspoon dried oregano
  • Salt and pepper to taste
  • Fresh parsley for garnish

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. In a saucepan, heat olive oil over medium heat and sauté garlic until fragrant.
  3. Add the rice and stir for 1-2 minutes, then pour in the vegetable broth, lemon juice, and zest.
  4. Bring to a boil, then reduce heat, cover, and simmer for 15 minutes or until rice is cooked.
  5. While the rice is cooking, season the salmon fillets with oregano, salt, and pepper.
  6. Place the salmon on a baking sheet and bake for 12-15 minutes or until cooked through.
  7. Fluff the rice with a fork and serve topped with the baked salmon and fresh parsley.
