- 2 cups vegetable broth
- 1 lemon (zested and juiced)

- Fresh parsley for garnish
Instructions
- Preheat the oven to 400°F (200°C).
- In a saucepan, heat olive oil over medium heat and sauté garlic until fragrant.
- Add the rice and stir for 1-2 minutes, then pour in the vegetable broth, lemon juice, and zest.
- Bring to a boil, then reduce heat, cover, and simmer for 15 minutes or until rice is cooked.

- Fluff the rice with a fork and serve topped with the baked salmon and fresh parsley.
