Instructions
- Preheat the oven to 325°F (160°C).
- In a bowl, mix graham cracker crumbs, sugar, and melted butter until combined.
- Press the mixture into the bottom of mini cheesecake pans or muffin tins to form the crust.
- In a separate bowl, beat the cream cheese until smooth.
- Add powdered sugar, sour cream, key lime juice, and zest, mixing until well combined.
- Incorporate the eggs one at a time, mixing until just blended.
- Pour the cheesecake filling over the crusts in the pans.
- Bake for 20-25 minutes or until the centers are set.
- Allow to cool, then refrigerate for at least 2 hours before serving.
