Description

Ingredients

  • 1 cup graham cracker crumbs
  • 1/4 cup sugar
  • 1/2 cup unsalted butter, melted
  • 16 oz cream cheese, softened
  • 1 cup powdered sugar
  • 1/2 cup sour cream
  • 1/2 cup key lime juice
  • 1 tablespoon key lime zest
  • 2 large eggs

Instructions

  1. Preheat the oven to 325°F (160°C).
  2. In a bowl, mix graham cracker crumbs, sugar, and melted butter until combined.
  3. Press the mixture into the bottom of mini cheesecake pans or muffin tins to form the crust.
  4. In a separate bowl, beat the cream cheese until smooth.
  5. Add powdered sugar, sour cream, key lime juice, and zest, mixing until well combined.
  6. Incorporate the eggs one at a time, mixing until just blended.
  7. Pour the cheesecake filling over the crusts in the pans.
  8. Bake for 20-25 minutes or until the centers are set.
  9. Allow to cool, then refrigerate for at least 2 hours before serving.
