Ingredients

- 8 oz cream cheese, softened
- 1/2 cup powdered sugar
- 1/2 tsp peppermint extract
- 1 cup whipped cream
- 1/2 cup crushed peppermint candies
- 1 package mini graham cracker crusts
Instructions
- Preheat the oven to 325°F (160°C).
- In a mixing bowl, beat the cream cheese until smooth.
- Add powdered sugar and peppermint extract, mixing until well combined.
- Fold in the whipped cream gently.
- Place the mini graham cracker crusts in a muffin tin.
- Spoon the cheesecake mixture into each crust.
- Top with crushed peppermint candies.
- Bake for 15 minutes, then let cool.
- Chill in the refrigerator for at least 2 hours before serving.
Notes
- For a stronger peppermint flavor, increase the peppermint extract.
- These can be made a day in advance for convenience.
