Ingredients

  • 9 lasagna noodles
  • 2 cups fresh spinach
  • 2 cups mushrooms, sliced
  • 1 cup ricotta cheese
  • 2 cups mozzarella cheese, shredded
  • 1 cup marinara sauce
  • 1/2 cup grated Parmesan cheese
  • 1 teaspoon garlic powder
  • 1 teaspoon Italian seasoning
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Cook the lasagna noodles according to package instructions; drain and set aside.
  3. In a skillet, sauté the mushrooms until they are tender, then add the spinach and cook until wilted.
  4. In a bowl, mix the ricotta cheese, garlic powder, Italian seasoning, salt, and pepper.
  5. Spread a layer of marinara sauce on the bottom of a baking dish.
  6. Layer 3 lasagna noodles over the sauce, followed by half of the ricotta mixture, half of the mushroom and spinach mixture, and a layer of mozzarella cheese.
  7. Repeat the layers, finishing with a layer of noodles topped with marinara sauce and remaining mozzarella and Parmesan cheese.
  8. Cover with foil and bake for 25 minutes, then remove the foil and bake for an additional 15 minutes until the cheese is bubbly and golden.
  9. Let it cool for a few minutes before slicing and serving.

Notes

  • For a vegan version, substitute ricotta and mozzarella with plant-based alternatives.
  • Feel free to add other vegetables like zucchini or bell peppers for extra flavor.
  • This lasagna can be made ahead of time and stored in the refrigerator before baking.
