Description

A vibrant and creamy no-bake dessert bursting with lemon flavor, layered with graham crackers and whipped topping.


Ingredients

  • 1 package of graham crackers
  • 2 (3.4 oz) packages of instant lemon pudding mix
  • 3 cups of milk
  • 1 (8 oz) package of cream cheese, softened
  • 1 cup of powdered sugar
  • 1 (8 oz) container of whipped topping, thawed
  • 1/4 cup of lemon juice
  • Zest of 1 lemon (optional for garnish)

Instructions

  1. In a mixing bowl, whisk together the lemon pudding mix and milk until smooth and creamy—about 2 minutes.
  2. In another bowl, beat the softened cream cheese and powdered sugar together until creamy and well combined.
  3. Gently fold in the whipped topping and lemon juice into the cream cheese mixture.
  4. In a 9×13 inch baking dish, layer graham crackers evenly at the bottom.
  5. Spread half of the pudding mixture over the graham crackers.
  6. Place another layer of graham crackers on top, followed by the remaining pudding mixture.
  7. Top with a final layer of graham crackers.
  8. Cover with plastic wrap and refrigerate for at least 4 hours, preferably overnight.
  9. Serve slices garnished with lemon zest, if desired.
