Ingredients

- 1 package of graham crackers
- 2 (3.4 oz) packages of instant lemon pudding mix
- 3 cups of milk
- 1 (8 oz) package of cream cheese, softened
- 1 cup of powdered sugar
- 1 (8 oz) container of whipped topping, thawed
- 1/4 cup of lemon juice
- Zest of 1 lemon (optional for garnish)
Instructions
- In a mixing bowl, whisk together the lemon pudding mix and milk until smooth and creamy—about 2 minutes.
- In another bowl, beat the softened cream cheese and powdered sugar together until creamy and well combined.
- Gently fold in the whipped topping and lemon juice into the cream cheese mixture.
- In a 9×13 inch baking dish, layer graham crackers evenly at the bottom.
- Spread half of the pudding mixture over the graham crackers.
- Place another layer of graham crackers on top, followed by the remaining pudding mixture.
- Top with a final layer of graham crackers.
- Cover with plastic wrap and refrigerate for at least 4 hours, preferably overnight.
- Serve slices garnished with lemon zest, if desired.
