Description

Ingredients

  • 3 tablespoons butter or bacon grease
  • 3 tablespoons all-purpose flour
  • 1 small yellow onion, chopped
  • 1 (15 oz) can diced tomatoes (fire-roasted recommended)
  • 1/4 cup heavy cream or whole milk (optional)
  • 1/4 cup chicken or vegetable stock
  • Salt and freshly cracked black pepper to taste
  • Hot sauce, a few dashes (optional)

Instructions

  1. Melt the butter or bacon grease in a skillet over medium heat.
  2. Add the chopped onion and sauté until translucent.
  3. Stir in the flour and cook for 1-2 minutes until lightly browned.
  4. Gradually add the diced tomatoes, using their juices to deglaze the pan.
  5. Stir in the chicken or vegetable stock and bring to a simmer.
  6. If desired, add the heavy cream or milk, stirring until creamy.
  7. Season with salt, pepper, and hot sauce to taste.
  8. Serve hot over biscuits or your choice of food.

Notes

Make-ahead gravy can be stored in the fridge for up to three days. Reheat gently on the stove.
