Ingredients

- 3 tablespoons butter or bacon grease
- 3 tablespoons all-purpose flour
- 1 small yellow onion, chopped
- 1 (15 oz) can diced tomatoes (fire-roasted recommended)
- 1/4 cup heavy cream or whole milk (optional)
- 1/4 cup chicken or vegetable stock
- Salt and freshly cracked black pepper to taste
- Hot sauce, a few dashes (optional)
Instructions
- Melt the butter or bacon grease in a skillet over medium heat.
- Add the chopped onion and sauté until translucent.
- Stir in the flour and cook for 1-2 minutes until lightly browned.
- Gradually add the diced tomatoes, using their juices to deglaze the pan.
- Stir in the chicken or vegetable stock and bring to a simmer.
- If desired, add the heavy cream or milk, stirring until creamy.
- Season with salt, pepper, and hot sauce to taste.
- Serve hot over biscuits or your choice of food.
Notes
Make-ahead gravy can be stored in the fridge for up to three days. Reheat gently on the stove.
