Description

A simple and delicious one-pot recipe for Chicken Parmesan Pasta that combines tender chicken, pasta, and a rich tomato sauce, topped with melted cheese.


Ingredients

  • 1 lb chicken breast, diced
  • 8 oz pasta (penne or rotini)
  • 2 cups chicken broth
  • 1 can (14 oz) diced tomatoes
  • 1 cup marinara sauce
  • 1 cup shredded mozzarella cheese
  • 1/2 cup grated Parmesan cheese
  • 2 cloves garlic, minced
  • 1 tsp Italian seasoning
  • Salt and pepper to taste

Instructions

  1. In a large pot, heat a little oil over medium heat and add the diced chicken. Cook until browned.
  2. Add minced garlic and cook for another minute.
  3. Stir in the pasta, chicken broth, diced tomatoes, marinara sauce, Italian seasoning, salt, and pepper.
  4. Bring to a boil, then reduce heat and simmer until the pasta is cooked and the liquid is mostly absorbed.
  5. Stir in the mozzarella and Parmesan cheese until melted and well combined.
  6. Serve hot, garnished with additional cheese if desired.

Notes

  • Feel free to add vegetables like spinach or bell peppers for extra nutrition.
  • For a spicier version, add red pepper flakes.
