A simple and delicious one-pot recipe for Chicken Parmesan Pasta that combines tender chicken, pasta, and a rich tomato sauce, topped with melted cheese.

- 1 lb chicken breast, diced
- 8 oz pasta (penne or rotini)
- 2 cups chicken broth
- 1 can (14 oz) diced tomatoes
- 1 cup marinara sauce
- 1 cup shredded mozzarella cheese
- 1/2 cup grated Parmesan cheese
- 2 cloves garlic, minced
- 1 tsp Italian seasoning
- Salt and pepper to taste
Instructions
- In a large pot, heat a little oil over medium heat and add the diced chicken. Cook until browned.
- Add minced garlic and cook for another minute.
- Stir in the pasta, chicken broth, diced tomatoes, marinara sauce, Italian seasoning, salt, and pepper.
- Bring to a boil, then reduce heat and simmer until the pasta is cooked and the liquid is mostly absorbed.
- Stir in the mozzarella and Parmesan cheese until melted and well combined.
- Serve hot, garnished with additional cheese if desired.
Notes
- Feel free to add vegetables like spinach or bell peppers for extra nutrition.
- For a spicier version, add red pepper flakes.
