One Pot Meatball Pasta

Description

A comforting and nostalgic dish of meatballs and pasta cooked together in a rich marinara sauce.


Ingredients

  • 8 oz pasta (spaghetti, rotini, or penne)
  • 1 lb ground beef or turkey
  • 1/4 cup breadcrumbs
  • 1/4 cup grated Parmesan cheese
  • 1 egg
  • 2 cloves garlic, minced
  • 1 tsp Italian seasoning
  • Salt and pepper to taste
  • 24 oz marinara sauce
  • 2 cups chicken or vegetable broth
  • Fresh basil for garnish

Instructions

  1. Begin mixing the ground meat, breadcrumbs, Parmesan, egg, minced garlic, Italian seasoning, salt, and pepper in a bowl until well combined.
  2. Form the mixture into mini meatballs, about an inch in size.
  3. Heat your pot over medium heat, adding a drizzle of olive oil.
  4. Brown the meatballs for about 5-7 minutes, turning occasionally until they’re cooked through and golden.
  5. Remove them from the pot and set aside.
  6. Introduce the pasta, marinara sauce, and broth to the same pot.
  7. Bring the mixture to a boil, stirring to incorporate flavors.
  8. Add the meatballs back into the pot and lower the heat to simmer.
  9. Cover and let it cook for about 10-12 minutes until the pasta is tender.
  10. Serve hot, garnished with fresh basil.
