- 1 cup cherry tomatoes, halved

- Salt and pepper to taste
- 8 ounces pasta of choice
- 2 cups vegetable broth

Instructions
- Heat olive oil in a large pot over medium heat.
- Add garlic and sauté until fragrant.
- Add shrimp and cook until pink, about 2-3 minutes.
- Add mixed vegetables and cherry tomatoes, cooking for another 3-4 minutes.
- Stir in the pasta, vegetable broth, Italian seasoning, salt, and pepper.

- Serve hot, topped with Parmesan cheese if desired.
