One Skillet Salmon with Lemon Orzo

Description

A vibrant one-skillet dish featuring seared salmon served with creamy lemon orzo, fresh spinach, and cherry tomatoes.


Ingredients

  • Salmon Fillets: Fresh, skin-on fillets
  • Orzo Pasta: 1 cup
  • Lemon: Juice of 1
  • Garlic: 3 cloves, minced
  • Fresh Spinach: 2 cups
  • Cherry Tomatoes: 1 cup, halved
  • Fresh Parsley: Chopped, for garnish
  • Parmesan Cheese: Finely grated, for garnish
  • Olive Oil: 2 tablespoons
  • Salt & Pepper: To taste

Instructions

  1. Heat olive oil in a skillet over medium heat.
  2. Season the salmon fillets with salt and pepper.
  3. Sear the salmon skin-side down for 5-7 minutes until golden brown, then flip and cook for another 3-4 minutes.
  4. Remove salmon and set aside.
  5. Sauté minced garlic in the same skillet for 1 minute.
  6. Add lemon juice and orzo to the skillet, along with 2 cups of water or broth, and bring to a boil.
  7. Reduce heat and simmer for 10-12 minutes until orzo is al dente.
  8. Mix in spinach and tomatoes, and cook until spinach wilts, about 2-3 minutes.
  9. Return salmon to the skillet to warm through.
  10. Garnish with parsley and Parmesan cheese before serving.

Notes

Feel free to adjust the vegetables according to your preference. You can add capers or olives for extra flavor.
