- 8 oz fettuccine pasta
- 1 lb shrimp, peeled and deveined
- 1/2 lb andouille sausage, sliced
- 1 cup heavy cream
- 1/2 cup chicken broth
- 1/2 cup diced tomatoes
- 1/2 cup bell peppers, diced
- 1/4 cup green onions, chopped
- 2 cloves garlic, minced
- 2 tbsp Cajun seasoning
- Salt and pepper to taste
- 2 tbsp olive oil
Instructions
- Cook the fettuccine pasta according to package instructions; drain and set aside.
- In a large skillet, heat olive oil over medium heat.
- Add the andouille sausage and cook until browned.
- Add the shrimp and cook until they turn pink.
- Stir in the garlic, bell peppers, and Cajun seasoning; cook for 2-3 minutes.
- Add the diced tomatoes, chicken broth, and heavy cream; bring to a simmer.
- Mix in the cooked pasta and toss to combine.
- Season with salt and pepper to taste.
- Garnish with green onions before serving.
Notes
- For a spicier dish, add more Cajun seasoning.
- Can substitute shrimp with chicken or other seafood.
- Serve with garlic bread for a complete meal.
